Microgreens are garnishing thousands of plates in the U.S., but have you heard the name before? These mini-leaves have a short history and originated on menus in San Francisco in the early 1980s. Today, the industry in the U.S. is growing substantially with a variety of seed companies and independent growers. Recently, a few locals from Columbia, Missouri now fight to bring the microgreen market to the Midwest.
